This Blanc de Blancs has been made from a single vineyard in the Adelaide
Hills. It has aged for 5.5 years on lees prior to disgorgement and release. The
sparkling wine has a noticeable bouquet of lifted roast nuts and brioche with
green apple and citrus flavours. It finishes dry and lingering with a
delicate fruit sweetness combined with roast almonds and a hint of truffle as a
result of the aging process.
