Bonnet Ponson Second Nature Champagne 2015
45% Pinot Noir, 40% Chardonnay, 15% Meunier – all Chamery Premier Cru
fruit, grown on south-east facing slopes of calcareous clay, studded with
limestone pebbles, and subsoils of sand rich in fossil shells. The fruit was
organic, but not quite certified in 2015. Fermentation by indigenous yeasts,
then transferred to 4-year old barrels (228L and 400L) for 9 months, where malo
occurs and the wines rest on the lees. The wine was then bottled with second
fermentation initiated by cultured yeast. Disgorged after 20 months (on
15/07/18) with zero dosage. Zero SO2 at any stage. 12% alc.
