The Chalmers Family property on Mt Camel Range in Heathcote is the home to
this single vineyard Fiano and it feels at home here as it does in Campania,
Italy. Fiano is drought tolerant, disease resistant and is naturally high in
acidity, which is why you’re seeing it pop-up all-around Australia. Chalmers
emphasise the hallmark bees-wax texture of the variety with 10 months ageing on
lees and a small portion of oak that build layers to balance the high-acidity.
Try this big spicy mouthful with a chicken and asparagus risotto.
