The fruit was handpicked, a small amount of the bunches were placed directly into the fermenters with the balance being destemmed and placed on top for fermentation. A slow even fermentation with a couple of plunges and then pressed and placed into a blend of French oak barriques (30% new) for 10 months. Malolactic fermentation occurred in spring. Selected barrels were blended, bottled and cellared for 18 months before release.
Notes of blue florals and olive are immediate on opening. Aromas of liquorice and Doris plum with hints of Asian 5 spice and Tasmanian native bushes give a winter herb lift. There is a brooding nature to the aromatics with notes of flint and blueberry. Fine natural acidity and powdery tannins give restraint to the fruit profile of fresh plum, tamarillo, cured meats and truffle. The tension between natural acidity and fine red fruits give flavour through the palate and persist remarkably for a young wine. This gives way to an earthy texture, softening of red fruits, complexed with savoury, cocoa notes.
