lightly sulphured, fermented with native yeasts and then matured in a
cellar carved out of the hillside tuffeau that maintains consistent temperature
and humidity all year long. Drinkers should be forewarned that there is
often some residual sugar, even in the driest styles. The Jasnieres is
expressive of almond mealy and apricot kernel with a vibrancy that is a
signature of the variety.
