This much-loved 100% Chenin Blanc is drawn from the second, later pickings
from a range of Chidaine's old Chenin plots - including the Clos du Volagray,
Saint-Martin and Les Grillonnières - sites that have stony soils, heavy in
yellow limestone (or tuffeaux). These vines range in age from 30-90 years and
are always cropped at a tiny yield. This wine is an absolute must have!
After pressing, alcoholic fermentation is carried out by
indigenous yeasts in demi-muids, pieces of wood with a capacity of 600 litres.
This can last up to six months. No malolactic fermentation. Aging is carried out
on fine lees, always in demi-muids.
