Gorrondona Txakoli is made from the traditional Basque varietals Hondurabi
Zuri (85%) with little bits of Iskirita Zuri Hadia (15%). It’s handpicked and
fermented with indigenous yeasts in stainless steel, kept on lees for six months
before being racked, then put through a single course filter and bottled.
Gorrondona shows cut grass, fresh lime leaf and white floral aromatics,
almost reminiscent of dry Clare Valley Riesling. The palate is lean and tight,
driven by a citric acid that makes it an ideal match for the salt-laden dishes
of the Basque Country.
