Saint Scholar Sauvignon Blanc 2023

Despite a cool and at times challenging growing season, the 2023 vintage has delivered outstanding quality. The vineyard and winery teams are especially proud of this release, which captures the vibrancy and clarity of fruit from the season.

Grapes were harvested in the early morning to preserve natural acidity and picked at peak flavour ripeness. After a gentle pressing, the juice was allowed to rest briefly before a clean rack, with a touch of lees retained to enhance texture. A cool fermentation over 10–12 days preserved aromatic lift and freshness, followed by cold settling ahead of bottling.

Pale straw with a hint of green in the glass, this wine opens with vibrant aromas of grapefruit, passionfruit, and freshly cut grass. The palate is bright and refreshing, bursting with citrus and tropical fruit flavours, balanced by crisp acidity and a clean, lively finish.
