80% Semillon, 20% Sauvignon Blanc sourced from Bowe-Lees-Loveys in
Woodside. Unfined and unfiltered. About one-third of the co-harvested
Semillon/Sauvignon Blanc was destemmed and fermented on skins for about twelve
weeks, in oeuf. The balance was foot crushed and “whole bunch pressed” after
about 5 hours of skin contact. This was transferred to old oak barriques and
went through a natural fermentation. The wine underwent elevage on full lees in
oak for nearly twelve months.
