Balnaves Sparkling Cabernet Sauvignon is a distinguished expression of Coonawarra, honouring Australia’s tradition of richly layered sparkling reds. Built around a solera dating back to the 1990s and complemented by younger vintages, it reveals concentrated aromas of blackcurrant, dark cherry and dried fig, alongside cocoa, clove and subtle Christmas cake spice. The palate is generous yet beautifully structured, with ripe blackberry, blood plum and savoury complexity balanced by a fine, persistent mousse. Traditional method bottle fermentation and a dosage of aged vintage Port lend further richness and depth. A sophisticated sparkling red with excellent ageing potential, particularly suited to roast turkey, glazed ham or festive celebrations.
