Chevillon Nuits St Georges Les Cailles 2021

A benchmark Premier Cru from Nuits Saint Georges, the 2021 Les Cailles from Domaine Chevillon shows why this estate is held in such high regard across Burgundy.

The nose is precise and lifted, with red cherry, wild strawberry and raspberry layered over violet, subtle spice and a touch of earth and forest floor. On the palate it is medium bodied but deeply structured, with fine, well integrated tannins and a natural tension that runs through the wine. The fruit is pure and focused, shaped by careful élevage in a mix of new and seasoned French oak.

There is a refined rather than forceful feel here, with length coming from line and energy rather than weight. A classic Pinot Noir for duck, roast quail or slow cooked lamb.
