Eric Forest Pouilly Fuisse L'ame Forest 2021

L’Âme Forest is a finely tuned Chardonnay drawn from four of the coolest vineyard sites around Vergisson, combining marl and clay limestone soils with parcels of older vines.

Fermented in cask with native yeast and much of its lees, the wine shows citrus, white peach and subtle stone fruit alongside a firm mineral edge. There is real depth through the mid palate, but the overall feel remains fresh, energetic and precise. Two winters of élevage add texture and complexity before bottling with minimal sulphur and no filtration.

A beautifully composed white Burgundy with both tension and quiet richness. Ideal with roast chicken, grilled fish or creamy seafood dishes.
