The 2023 Giant Steps Applejack Vineyard Chardonnay is an exceptional expression of Upper Yarra Valley Chardonnay, sourced from the estate’s elevated, volcanic soils in Gladysdale. Aromas of lemon zest, white nectarine and delicate citrus blossom unfold alongside toasted almond, subtle cedar and fine pastry notes. The palate is remarkably precise and concentrated, with vibrant natural acidity, a tightly woven mineral structure and a delicate creamy texture. Whole bunch pressed, wild fermented and matured for nine months in seasoned French oak, without malolactic fermentation, it retains exceptional purity and tension. A Chardonnay of remarkable length and ageing potential, particularly suited to scallops, roast chicken or delicate seafood dishes.
