Whisson Lake Monopole Pinot Noir is a remarkable expression of Adelaide Hills Pinot Noir, sourced from just four rows of D5V12 clone vines within the estate vineyard. Deeply perfumed yet restrained, it reveals dark cherry, violet and liquorice, layered with savoury notes of wild mushroom, game and forest undergrowth. The palate is finely structured and intensely detailed, with vibrant acidity, precise tannins and a remarkable depth of flavour that unfolds gradually in the glass. Wild fermented with 10% whole bunches and matured for 20 months in French oak, this is a serious, Burgundy inspired Pinot Noir with considerable ageing potential. Particularly compelling alongside roast duck, game or wild mushrooms.
