THALASSISTHS is produced from the traditional white variety of Santorini, Assyrtiko.
For THALASSITH, Gaia choose exclusively Assyrtiko from the authoritative vineyards of Episkopi, Akrotiri and Pyrgos, aged around 80 years, with a particularly low yield per hectare.
The soil and the variety combined with the special vinification, give a wine with a strong personality, flavour, duration and nerve.
THALASSIS stands out best during a meal and prefers flavours of moderate aromatic intensity, dominated by salty, sour or fatty. Pour it into a wide carafe (decanting) about half an hour before enjoying it.
If you try to age THALASSITIS, for 2 to 3 years, you will see its minerality recede while intense aromas of fruit and honey will appear.
